The first round consisted of eight dishes of "fruit for viewing"—"Eight Fruits in an Embroidered High-Class Arrangement": citron, mandarin orange, pomegranate, orange, goose pear, milk pear, hawthorn, and flowering papaya. Citron is also called fragrant citron, and hawthorn resembles papaya but is slightly larger, yellow in color and astringent in taste. Viewing the fruit was for visual appeal, not for actual consumption. Qian Yi of the Northern Song Dynasty, in his *Southern New Book, Ren Collection*, stated that the practice of viewing dishes originated from Tang Dynasty imperial banquets, called "viewing food," and became widely popular in the Song Dynasty.

The second round of 12 kinds of dried fruits, "Le Xian Dried Fruit Bag": lychee, longan, lotus seed, torreya nut, hazelnut, pine nut, ginkgo, pear flesh, jujube rings, lotus seed flesh, crabapple fritters, and steamed jujube.

The third round consists of 10 boxes of "Lujin Xiangyao" (a type of herbal medicine): Brain Flower, Licorice Flower, Cinnamon Balls, Costus Root and Clove, Brain Tea, Gentian Root, Amomum Flower, Cinnamon Flower, Atractylodes Rhizome and Ginseng, and Olive Flower. This is an air freshener.

The fourth round of 12 "carved and honey-preserved" items include: carved plum balls, red jujubes, carved bamboo shoots, honey winter melon fish, carved red flower balls, large pieces of papaya, carved kumquats, green plum lotus leaves, carved ginger, honey bamboo shoot flowers, carved oranges, and square papaya flowers, all of which are candied fruits.

The fifth round consists of 12 "fragrant, salty, and sour" dishes: fragrant papaya, pepper plum, fragrant vine flower, fragrant cherry, perilla and galangal, fragrant daylily, fragrant grape, licorice flower, ginger plum, plum meat cake, water-red ginger, and mixed plum cake. This round of "salty and sour" dishes is to neutralize the sweetness of the previous round of "honey-fried" dishes.

The sixth round features "Ten Kinds of Dried Meat": long strips of dried meat, dried pork strips, Yunmeng piglets, dried shrimp, dried meat, milk curd, xuanzha (a type of dried meat), Jinshan salted black beans, pork with wine and vinegar, and minced meat. "Tingzi" refers to long strips of dried meat, "Yunmeng piglets" are dried and steamed pork strips, and "xuanzha" is minced dried meat. Cai Tao, the second son of the notorious Northern Song Dynasty minister Cai Jing, recorded in his *Iron Mountain Miscellany* that before Qian Chu, the King of Wuyue, surrendered to the Song Dynasty, Emperor Taizu of Song, Zhao Kuangyin, ordered the imperial chefs to prepare several southern dishes to appease him. The imperial chefs then created "xuanzha," which became Zhang Jun's favorite. Jinshan salted black beans are fermented black beans used to dip dried meat. This round all belong to the category of dried meat strips.

The seventh round features "Eight Plates of Dangling Hands": pickled bees, grapes, lotus seeds, olives, kumquats, fresh coconuts, small olives, and tangerines. These are fresh small fruits, unlike the "Eight Fruits of Embroidery" which mainly consists of large fruits.

After a short rest, the banquet resumed.

The first round consists of eight dishes of "seasonal fruits": spring lotus root, pear cakes, sugarcane, milk pear cakes, persimmons, oranges, tangerines, and raw lotus root slices.

The second round features 12 seasonal fruits: kumquat, bayberry, new kudzu, honey mushroom, crisp orange, elm tangerine, new coconut, yam bean, lotus root, sugarcane jujube, new tangerine, and pear blossom.

The third round featured the 12-item "Carved Honey Dessert" that was served at the "First Seat" restaurant.

The fourth round involves returning to the "first seat" with 12 "fragrant, salty, and sour" dishes.

The fifth round features 12 varieties of "Longchan Fruits": Lychee Dew Cake, Lychee and Polygonum Flower, Lychee Good Husband, Longchan Peach Strips, Crispy Walnut, Longchan Jujube Rings, Longchan Pear Flesh, Fragrant Lotus, Fragrant Grapes, Longchan Pine Nuts, Sugar-Frosted Jade Bees, and White Longchan Peach Strips. "Lychee and Polygonum Flower" is lychee flesh coated with maltose. This round of "Longchan" consists of dried and fresh fruits coated with sugar frosting, still classified as candied fruit.

The sixth round featured the "Ten Flavors of Preserved Meat" that were first served.

"Zai Zuo" served another 66 large dishes.
